Everybody in Asia knows that if you want the best food, you head straight for the street vendors. They have one signature dish. If the food ain't good, they're not going to last long. It's that simple. In Australia, if you want the most authentic Asian food, look for the dodgiest looking places with a line of hungry Asians lining up to get in. Mamak fulfils both these culinary requirements. Starting off as a permanent fixture in Chinatown's Friday night markets, Mamak now has their own restaurant and can boast being the only specialist roti eatery in Sydney.
Watching Mama K, aka the man behind the glass counter, is like a performance as he spins, flips and stretches the roti dough into a thin pancake-like creation that then gets cooked over an electric hotplate. They do various styles of roti, Malaysia's version of a naan, ranging from savoury to sweet.
Best choices are the roti canai, or for those with a death wish, the butter roti, which will have your heart beating double-time. Each is served up with two sides of curry for dipping and is light and fluffy, just like in Malaysia. Add a side of kankung vegetables and some satays and as my mum would say "it's a perfect meal la".
