Much has been made of Time To Vino's name, its cutesy menu divisions (with sections like ‘Waiting For Friends'), and its position at the forefront of the rash of new small bars expected in Sydney.
Most of this misses the point, concentrating on TTV's form over its substance.
On the one hand, it's an appealingly quirky little bar, but you're not here for the décor. You're here for one of the sharpest, most concise wine lists in Sydney, featuring lesser known varietals such as grüner veltliner, which tastes like drinking a sunshower. You're here for the way these wines are described by the knowledgeable staff in accessible ways, getting you just what you want. And you're here to pair your tipple with wine-friendly food, like the oh-so fresh oysters and the wagyu bresaola. These are the things that will assure TTV is more than mere novelty, and is here to stay.
